White Chocolate Chip & Craisin Cookies

Yield: 48 cookies


1 cup butter, softened

1 cup packed brown sugar

1/2 cup white sugar

2 eggs

Zest from two oranges

1 tablespoon + 1 teaspoon orange juice (preferably freshly squeezed)

2 teaspoons vanilla (can substitute almond extract, all, or in part)

3 cups flour

1/4 tsp. salt

1 teaspoon baking soda

1 1/2 cups white chocolate chips

2 cups craisins (sweetened dried cranberries)


Preheat oven to 375.

Grease cookie sheet.

In a large bowl, cream together the butter, brown sugar and white sugar.

Beat in the eggs, orange juice, orange zest, and vanilla.

Combine the flour and baking soda; stir into the sugar mixture

Add the white chocolate chips and the Craisins.

Drop by spoonful onto greased cookie sheet.

Bake for 8-10 minutes.

Remove from oven, cool on sheet for about a minute and then transfer to wire rack to finish cooling.

Note: Lemon zest may be used instead of orange
